Chris Schloss is a soft spoken, pensive guy – a striking contrast to his neighbor Debbie Klaubner of Debbie’s Kitchen. Chris owns Scratch – a sweet little bakery & café. His philosophy is real food, real simple, real pure. He offers a delicious array of traditional, vegetarian and vegan foods.

Chris’ background is finance and banking – a good background to have if you want to open your own business. Originally from Buffalo, he chose to relocate to Albany because it was “close to the Adirondacks, Boston and the City.” He was able to negotiate a substantial severance package from his banking career which gave him the financial breathing room to renovate his building on Madison and open Scratch. He took an 8 week certification course in Baking at the Culinary Institute of America because he wanted to bake bread for his sandwiches. Through customer demand, the ‘bakery’ part of Scratch evolved to include yummy desserts as well.
